Strawberry Shortcake

I can never show up to a BBQ or any party empty handed… it’s a guilty feeling I get if I do! But for me even worse than being the person who shows up empty handed is the person who brings their designated dish. Don’t get me wrong I love the trusty chip bringer or the person who grabs the store brought cookies on the way over, but there are way way too many recipes out there to continually make just one.

I wanted to make a very light, but delicious, dessert to bring to this BBQ and automatically I thought of strawberry shortcake cupcakes! A white cupcake topped with a whip cream icing and a strawberry slice! Believe me, tastes delicious after hot dogs and hamburgers!

For the Icing you’ll need:
6 tablespoons unsalted butter, softened
2 cups confectioners’ sugar, sifted
1/2 teaspoon pure vanilla extract
Pinch of salt
2 tablespoons milk or heavy cream
Strawberry jam

In a bowl, using a mixer, beat the softened butter at medium speed until smooth. Add the confectioners’ sugar, vanilla extract and salt and beat the mixture at low speed just until combined… the mixture should start to be a little fluffy. Add the milk or heavy cream and beat until light and fluffy. Mix the frosting with strawberry jam to taste. Spread the frosting on the cooled cupcakes and ta-dah! There you have yourself a whipped cream frosting thats incredibly tasty!
