I know that apple cider is more of a fall than winter thing but I love it so much and nothing better than a warm mug of spiced cider! So for Thanksgiving when I had to come up with a dessert last minute I chose this and they were so good I wanted to share them now before it got way past the holiday season!
For the cupcakes:
3 cups unpasteurized apple cider
3/4 cup vegetable shortening
1 3/4 cups sugar
2 large eggs
2 cups all-purpose flour, sifted
1/8 teaspoon ground cloves
1 teaspoon cinnamon
1 teaspoon baking soda
(If you want you can add a splash of spiced rum)
For the Icing I just used a vanilla cream icing however there’s a ton of recipes for apple cider frosting- try this one out!
