A couple years back I discovered my love for blackened chicken. I have always been a fan of very flavorful, spicy rubs but now I can’t get enough of it! And when deciding what I was going to have as a side I decided upon mashed cauliflower which I had never tried before. This dinner was absolutely delicious, filling yet simple!
For the mashed cauliflower I bought a bag of cauliflower. Microwave or steam the cauliflower until soft. I added garlic and some parmesan cheese to the cauliflower and mashed until the consistency of mashed potatoes but a little less thick.
To blacken the chicken or fish or whatever you want blacked warm up a skillet. Cover each side with the seasoning and place on the heated skillet. Let it smoke to create that nice crust on the outside (and cook the chicken all the way through)
