Crab Cakes & Sweet Potato Chips

As much preparation and planning it takes to make a whole meal, there are times where cooking is relaxing, stress relieving and when you finally sit to enjoy the fruit of your labor, you can’t help but be thankful that you’re eating something delicious instead of another frozen meal!

I have a friend who made sweet potato chips and now that I have a new acquired taste for the vegetable, I wanted to try it out. Seriously so freaking simple! Get a sweet potato, cut into slices, drizzle some olive oil over, and salt. Place in the oven and wait! I broiled them but I know you can bake them as well.

But you can’t have a full meal of just sweet potato chips so I paired the fun side with crab cakes and zuchinni slices. The zuchinni is the same as I did here… simply saute in a little bit of garlic olive oil. To make a crab cake isn’t as hard as you think it is…. follow this simple recipe if you want to make your own Charleston crab cake.

1 large egg
Bread Crumbs
1.5 Tbsp. olive oil
1 Tbsp. melted butter
¼ cup chopped onion, lightly sautéed
¼ tsp. salt
¼ tsp. pepper
Hot sauce to taste (optional)
2 cups lump blue crab meat

In a bowl, beat the egg lightly with a fork or whisk, add all the remaining ingredients except the crab meat and mix… Add the crab meat to the mixture and gently toss. The mixture will then form together and you’ll be able to make the “cakes”

Lightly oil or butter a frying pan. Brown each cake, about two to four minutes per side, in the pan. Serve with remoulade or sauce of your choice!
